Chawanmushi

A small piece of dried bonito, use 2 bowls of boiling water, cook for 10 minutes on medium and low heat

Beat the eggs with salt, and mix with the boiled bonito water. The ratio of egg liquid to water is 1:2.

Sift the mixed egg liquid, it will be more tender

Pour the egg liquid evenly into the tea cup, and put a few pre-cut shiitake mushroom slices on the surface. Wrap in plastic wrap and let stand for 5 minutes

After steaming, add green onions and drizzle a few drops of light soy sauce to taste.
Tips:
If there is more time, soak the dried bonito for as long as possible to let it taste out. I boil the bonito water after lunch and then soak it until dinner. If there are shrimps or clams, you can put a shrimp or a clam at the bottom of the cup, it will be more delicious when steamed.
