Chestnut Roasted Chicken Wings

Wash the wings, cut into two pieces, peel the chestnuts and set aside (I use leftover chestnuts in sugar at home)

Wash ginger slices, dried red peppers and star anise and set aside

Pour a little oil into the pan, heat the pan, add ginger slices and sauté

Pour into the wings and stir fry until the color changes

Add dried red pepper and star anise and stir fry until the surface of the wings is slightly browned

Pour in a little white wine (I used Erguotou) and light soy sauce, stir fry for color
7.
Add three small bowls of cold boiling water to the wings
8.
Bring to a boil, add a little sugar and dark soy sauce, turn to medium heat and cook for 20 minutes
9.
Add chestnuts, cook for 10 minutes on medium heat, harvest the juice on high heat, and sprinkle with chopped green onion.
