Chicken Pearl Balls

The chicken breast is chopped into meat.

Wash the glutinous rice and soak in water for 4 hours in advance.

Dried shiitake mushrooms are soaked in warm water and cut into small particles. The shallots and ginger are chopped separately.

Add shredded shiitake mushrooms to the chicken filling, appropriate amount of chopped green onions, ginger, sugar, salt, white pepper, light soy sauce, rice wine, and sesame oil.

Take an appropriate amount of filling and knead it into a ball with your palm.

Drain the soaked glutinous rice and place it in a container. Roll the kneaded filling mass in the glutinous rice to make the meatballs evenly stick to the glutinous rice grains.

Let the water boil and steam for 15 minutes, turn off the heat and wait for 5 minutes to open the lid.

Tips:
It is best to soak glutinous rice for more than 5 hours, the steamed balls will be very soft and waxy
