Chicken with Red Onion Head (home-made Version)

After the chicken is cleaned, remove the head and tail, and then evenly spread a thin layer of salt and ginger powder on the inside and outside of the chicken, and place the chicken on a plate with ginger slices (the plate is slightly darker to prevent the chicken juice from overflowing during steaming)

Boil the water in the pot and add the chicken

Cover the pot and steam on medium-high heat until the chicken is cooked through

Take a chopstick and insert it into the thicker part of the chicken. It can be easily inserted and will be cooked when there is no blood (about 15min, depending on the size of the chicken)

During the steaming of the chicken, the shallots can be prepared, and the shallots are cleaned and chopped.

Put a spoonful of oil in the pot to heat up, turn off the heat, and stir-fry the shallots with the remaining heat

Add a spoonful of granulated sugar

Add 1 scoop of steamed fish soy sauce

Pour the steamed chicken juice and mix well

After the chicken is cut into pieces, pour the red onion sauce onto the chicken.
