Chongqing Cold Noodles

Buy a pound of water at the vegetable market. Cannot use ordinary dried noodles at home. I don’t know how to describe it. People in Chongqing, Sichuan know how to:)

Put the pot on the fire, and make the noodles when the water is boiled.

The noodles are cooked, not too soft, about four to five minutes. Remove the noodles and place them in the shau Kei to drain the water. Use an electric fan to cool them down. During this period, use chopsticks to constantly pick up the noodles to ensure that the noodles are separated from each other and do not stick together.

Pour in sesame oil and mix well.

The cold noodles are ready.

Cover with a clean towel to prevent the noodles from drying out and affecting the taste.

Boil the bean sprouts in a pot.

Pick up, shower, and soak in pure water for later use.

Prepare ginger and garlic. Slice and mince.
