Chop Peppers
1.
Wash and dry the peppers first! It must be dried, otherwise the peppers will deteriorate easily during the pickling process! Prepare accessories!
2.
Cut the chili peppers into small pieces one by one with scissors. In fact, you can have any shape! This process is a bit painful. I cut it for more than an hour. I cut it while watching TV. Be careful not to cut it! Be careful not to get the chilli water on your body and eyes, and be careful not to touch your eyes with your hands! If you like, you can also add some sliced ginger and garlic!
3.
Wash the sealed jar in advance and let it dry. You can also wipe it dry with kitchen paper.
4.
Pour the wine into the cut peppers to feel that each slice of pepper is sticky to the wine, and then add salt, so that every slice of pepper seems to have salt! That's OK!
5.
Then put it into an airtight jar. When it’s hot, it’s best to keep it in the refrigerator, and you can cook it in a week at most!
Tips:
Be careful not to let the pepper water and seeds get on the skin, it will be very painful, and be careful on your hands. Don't touch your eyes with the hands that cut the pepper! If your hands feel hot, it's better to wash your hands with vinegar! Do not wash in hot water, it will be more spicy afterwards! This is my own experience, and I don’t know if it makes sense!
