Classic Braised Pork

1. Wash the pork belly and cut into large pieces.

2. Bring the meat to a boil with cold water and blanch the meat.

3. Prepare star anise, cinnamon, onion, ginger, garlic and chili.

4. Heat the pot, add the blanched pork belly, stir-fry on low heat until the pork belly comes out of oil.

5. Add green onion, ginger, garlic, star anise, cinnamon and chili, and stir-fry until the flesh is slightly yellow. Sheng out.

6. Leave the bottom oil in the pot and add rock sugar to a small fire until it froths and turns brownish red.

7. Pour in the stir-fried pork belly and stir fry evenly, so that each piece of meat is evenly covered with sugar.

8. Add cooking wine and soy sauce.

9. Add boiling water to cover the meat, cover the pot and bring to a boil, reduce the heat and simmer for 40 minutes,

10. Cook until the meat is cooked and rotten, and the soup is thickened.

Tips:

It is best to use rock sugar when stewing meat, which is brighter than white sugar, looks good, and tastes better.
