I always think that puffs are a magical thing. The cookie-like batter can actually puff into small hollow buns. The crunchy puff skins are fragrant and fragrant. It feels like eating a cheesecake version of puffs. The filling is rich, put in the mouth, rich and fragrant, praise!

Coffee Cheese Puffs

1. Put water, salt, sugar, and butter into the pot together, heat over medium heat and stir slightly to melt the butter completely

2. Continue heating until the water boils

3. After the water boils, turn to low heat and pour all the flour into the pot at once

4. Use a spatula to quickly stir to make the flour and water completely mix together. Stir until the flour and water are all blended together and the pan is non-stick, then turn off the heat, then take the pan out

5. When the batter is not too hot, you can add the beaten eggs

6. Add a small amount of eggs first, stir until the batter absorbs the eggs completely, then add another time

7. It is not necessary to add all the eggs. After adding the eggs, the batter will become more and more moist and smooth. Pick up the batter. The inverted triangle shape shown in the batter picture indicates that it is ok. No need to continue adding eggs.

8. Use a small spoon to directly scoop up the puff dough and place it on the baking tray, keeping a certain distance between each dough

9. Put the oven in the middle layer of the preheated 210° oven and bake for 10-15 minutes. When the puffs are fully expanded, lower the temperature to 180° and continue to bake for 20-30 minutes until the surface is brown and ready to be out of the oven.

10. To make coffee cheese filling, heat the cream cheese in water until it melts, add in powdered sugar, and beat with a whisk until smooth

11. Use 2 teaspoons of hot water to dissolve the coffee powder to make coffee liquid

12. Pour into the cheese paste and continue to beat with a whisk to make the coffee liquid and cheese mix evenly

13. Add the whipped cream in several times, and use a whisk to fully beat each time until the whipped cream is added

14. The coffee cheese filling is ready

15. Cut the baked puffs with a knife, and use a spoon to directly fill in the cheese filling, or use the puff mouth to fill in the filling directly from the bottom of the puffs, and finally pour the chocolate sauce on the coffee cheese puffs. All right

Tips:

1. After the puff is made, if you don't eat it right away, don't rush to fill it with the filling, otherwise the puff will not be crispy after absorbing the moisture of the filling;
2. For this coffee cheese filling, the amount of whipped cream can be adjusted according to your own preferences. If you like a light taste, you can increase the amount of whipped cream. If you like a thick taste, you can reduce the amount of whipped cream.
