Cold Bitter Chrysanthemum

A group photo of all the ingredients: red peppers are for good-looking, you don’t need them if you don’t like them, and you can replace them with small sharp peppers if you like them spicy.

Crush the peanuts and mince the garlic for later use.

Wash and shred the red peppers, blanch them with boiling water and remove them for later use.

The bitter chrysanthemum root is removed and rinsed with boiling water. It is best to add salt and soak for a while, remove and drain the water, tear it into small pieces and place in a plate.

Add the chopped peanuts, minced garlic and red pepper.

Adjust the juice: one spoon of light soy sauce, three spoons of vinegar, half a spoon of sugar, salt and sesame oil, mix well.

Pour the prepared sauce into the bitter chrysanthemum and mix well.

Sweet and sour, it tastes good.
Tips:
The bitter chrysanthemum is best washed with boiling water and soaked in salt for a while.
