Cold Black Fungus

Black fungus is soaked in cold water. Wash.

Boil water in a pot and blanch it.
3.
Rinse with ice water when it comes out of the pot (put ice cubes in the boiled water after cooling). This process is very important to restore the crunchy taste of the black fungus after blanching.

Drain the water. Add chopped millet pepper, salt, apple cider vinegar (the sugarless kind), sugar, light soy sauce, and olive oil, mix well and serve.
Tips:
1. After the black fungus is soaked, it must be cleaned piece by piece. In many cases, the black fungus that you buy contains sediment.
2. It doesn't take long to boil water, just blanch it.
3. If possible, it must be chilled with ice cubes to ensure a crisper taste.
