Cold Black Fungus
1.
50 grams of dried black fungus.
2.
Soak in warm water for 20 minutes to wash off the sand and drain the water.
3.
Soak the red pepper in boiling water for 5 minutes, then dice, smash the garlic and mince.
4.
Blanch the black fungus in a pot of boiling water for 2-3 minutes, pick up and cool with ice water, drain the water, and place it on a plate. (It’s better to put it in the refrigerator to keep it cooler)
5.
Use 2 teaspoons of light soy sauce, a pinch of salt and sugar, chicken essence, 3 teaspoons of rice vinegar, an appropriate amount of thirteen incense and a few drops of sesame oil, then add minced chili and garlic to make a sauce, pour it on the black fungus, mix well and it's OK!
Tips:
Add some celery to the black fungus and blanch it to make the taste even better.
