Cold Chicken Feet (simple Version)

1. Fresh chicken feet, there will be stalls selling chicken and ducks, I will buy them at the Qian Auntie store at the gate of the community, because its slogan is: Don't sell overnight vegetables! Quite fresh!

2. Wash the chicken feet and prepare other ingredients.

3. Remove the pointed fingers of the chicken feet, chop small pieces, and chop other ingredients.

4. Cook chicken feet in a pot under cold water, add ginger slices and star anise.

5. After the water has boiled, cook for another five minutes. It is best to let the chicken feet be cooked and not rotten.

6. That's it.

7. Take out the ice water or cold water that has been washed clean and eaten, and let it cool. (I use pure water)

8. Add garlic, chili, and ginger!

9. Continue to add appropriate amount of rice vinegar, (because the meat will not be very sour when it encounters a small amount of acid, you can add more, I added about half a bowl of rice vinegar for less chicken feet), appropriate amount of sugar, salt, and a little soy sauce! Stir well.

10. Put it in an airtight container. The juice is best to soak 2/3 of the chicken feet, and then put it in the fresh-keeping layer of the refrigerator for five or six hours to taste, usually I will leave it overnight!

11. Close the lid and seal!

12. The next day, the finished product.

Tips:

1. Many food friends also add chopped green onion, coriander and other ingredients, because I rarely add green ingredients overnight!
2. The amount of rice vinegar should be a little more, you can add it below and taste it. Add according to your own taste!
3. You have to put it in the refrigerator to keep it fresh to have a sense of Q, elastic and chewy!
