Cold Duck Gizzards

Soak the duck gizzards in flour and water for 15 minutes and then wash

Cut off the white piece of skin

Cut waist flower

Add appropriate amount of water in the country, add ginger slices, and boil

Add duck gizzards and blanch for 3 minutes

Remove and rinse

Rinse with boiling water, blanch for 2 minutes

Soak in ice water for about 2 hours (the ice water is made with cold boiled water, do not use raw water)

Add the frozen duck gizzards, mix well, and marinate for more than 30 minutes.
Tips:
It’s worth noting that you must not soak duck gizzards in raw water
