Cold Egg Shreds

Soak shiitake mushrooms; (or use fresh shiitake mushrooms)

Carrots are peeled and shredded; soaked shiitake mushrooms are washed and shredded;

Shred lettuce leaves;

Boil shredded shiitake mushrooms in boiling water, remove and let cool;

Beat the eggs in a bowl, add appropriate amount of salt and cooking wine and mix well;

Fry into the frying pan to form egg crust; (I divide it into two)

Let cool and cut into egg shreds;
9.
Stir-fry the shredded carrots and shredded mushrooms in a frying pan;
10.
Put all the ingredients in a large bowl, add salt, oil, vinegar, sugar, and light soy sauce and mix evenly.
