Cold Fungus
1.
Soak the fungus in advance, rinse, blanch better than cold water and control moisture.
2.
Finely chop the onion, add some light soy sauce, vinegar, oyster sauce, and a few drops of sesame oil. Without oyster sauce, you can put a little less sugar.
3.
Heat a little oil in the pot.
4.
Pour the hot oil into the onion and seasoning, and stir well.
5.
Pour the seasoning on the fungus and mix well. The photo was taken too fast. The sauce hasn't penetrated, but there should be soup underneath.
Tips:
It's best to soak the fungus in advance. The soaking time for me this time was a bit short, and it didn't start completely. Generally, 1/4 onion is almost enough. I prefer to eat it. I used a small half, which is so much in the photo.
