Cold Lotus Root Slices

Prepare the raw materials.

Cut lotus root into thin slices.

Cut the ginger and garlic into finely pieces, and cut the pickled pepper into small pieces.

Peel the fried peanuts and pat into pieces.

Add enough water, salt and rice vinegar to the pot, and bring to the boil.

After washing off the starch on the surface of the lotus root slices, put them in a boiling pot and blanch them. Then they will disperse quickly and be evenly heated. After they become translucent, pour them into the strainer and rinse with cold water.

Open the cool white in the refrigerator in advance and freeze it into ice water, put the lotus root slices in the ice water for a few minutes, and then control the moisture.

Put lotus root slices and crushed peanuts on a plate.

Add homemade spicy red oil and sesame oil to the pot and cook until 70% hot.

Add minced ginger garlic and pickled pepper and sauté until fragrant.
11.
Add appropriate amount of light soy sauce and rice vinegar.
12.
Pour in the prepared seasoning juice and mix well.
Tips:
1. If you want to make crispy lotus root slices, you must carefully look at a few points in my introduction;
2. If you don't have homemade spicy red oil, pour hot oil into the pepper noodles and chili noodles to become simple spicy oil. The light soy sauce and rice vinegar are added a little more, so there is no need to add salt.
