Cold Noodles with Fresh Vegetables

Prepare the ingredients.

Pour oil in the pan, and stir-fry the vegetables when the oil is hot. Add appropriate amount of salt, light soy sauce, and pepper noodles.

After stirring for a while, add some water and continue to cook (the beans must be cooked). After all the vegetables are cooked, sprinkle with chopped green onion before turning off the heat to bring freshness.

Boil water in another pot and cook the noodles.

After the dough is cooked, remove it and soak it in the cold water prepared in advance for a while. Let the noodles cool down.

Rub the cucumber into shreds.

Transfer the noodles to the plate, pour the vegetable broth, and stir in the cucumber shreds. According to personal taste. (I put in salt, vinegar, chili, and mustard oil)
