Cold Pickled Cucumber

After washing the cucumber, cut it into even strips.

Put a teaspoon of salt and mix well.

Find a larger container, preferably one with a hole in the bottom. Put the cucumber strips in, then press them on with a heavy object and let them sit for 6 hours.

Cucumbers that lost water after 6 hours are somewhat soft, which is good for further pickling.

Mix salt, soy sauce, sugar, vinegar, and water into a bowl of marinade.

Put the marinade on a low heat and turn off the heat as soon as it boils.
7.
While hot, pour the cooked marinade into the cucumber strips, add mint, and marinate for 2 hours before eating.
