I learned this dish when I was studying, in Zigong, where rabbits are popular there.

Cold Rabbit

1. Cut sea pepper into sections and soak in boiling water. Wash and dice the rabbit and drain. Sliced ginger (you use tender ginger, so the quantity is more)

2. Add oil to the hot pot, more oil than normal stir-frying. After the oil is hot, add rabbit and stir fry. A lot of water will come out during the frying process, keep frying until the water dries.

3. After the rabbit is fried dry with water, add rock sugar, stir-fry the sugar and stir well.

4. Stir in ginger, star anise, and peppercorns.

5. Drain the peppers and pour them into the pot. Stir well

6. Add salt and soy sauce. If you like hemp, add pepper oil.
