Cold Red Amaranth

Prepare the red amaranth.

Wash the red amaranth.

Prepare ginger, garlic and shallots.

Chop the ginger, garlic and green onions, add salt and soy sauce.

Add oil to the pot and heat up, pour in the seasonings and fry, turn off the heat, add soy sauce, chicken essence, sesame oil, sugar, etc. and mix thoroughly.

Tips:
1. Remove the yellow leaves and old stems of red amaranth, and take the leaves and tender tips.
