Cold Shredded Pumpkin

1. After washing the pumpkin, cut it into two pieces, remove the seeds and flesh, use chopsticks or a knife that is not too sharp to stir out the shreds;

2. Add two teaspoons of salt to pumpkin shreds;

3. Knead to remove mucus;

4. Rinse with cold boiled water, drain and set aside, mince green onion and ginger for use;
