Cold Sweet and Sour Cucumber

Such cucumbers have spines on the surface.

Peel and cut into strips, add 1 teaspoon of salt and marinate for 10 minutes.

Pour out the marinating water and add 2 tablespoons of sugar.

2 tablespoons cold vinegar.

Mix well, cover with plastic wrap and refrigerate for 1 hour before serving. The ice-cold vinegar is sweet and very appetizing.
Tips:
1. Add salt and marinate for 10 minutes to remove the green and astringent taste. You can omit this step if you don't mind.
2. The vinegar is best to use a lighter color, which does not affect the overall color. Aged vinegar is not recommended because it tastes too strong.
