Cold Udon Noodles

Large collection of materials.

Shred cucumber and pour enoki mushrooms into a large bowl.

Chop the scallions and the garlic separately.

Prepare a pot of cold boiled water for later use.

Boil water in a pot, cut short udon noodles into boiling water and boil for one minute, remove and soak in cold boiling water to avoid stickiness.

Transfer the udon noodles to a large bowl of shredded cucumber and enoki mushrooms, add the chopped tomatoes and chopped green onions. According to personal taste, add salt, sugar, light soy sauce, sweet noodle sauce, and squeeze in lemon juice.

Heat the pot, add the white onion and minced garlic until fragrant, pour it into a bowl of udon noodles, and mix well.

This is a fast staple food suitable for hot weather, simple operation, sour and salty appetizer.
I made three servings. You can increase or decrease the serving size according to your food intake.
Because there are children to eat, I did not add spicy, you can add some chili sauce if you like spicy flavor.
