Prepare the ingredients in advance

Cut the lotus head into slices, and cut the coriander stalks into sections for later

Put bean paste, garlic mash, light soy sauce, sugar, salt, vinegar, and chopped green onion in a bowl, mix well and set aside
4.
Mix the prepared sauce, the sliced lotus head slices and coriander stalks, and serve on a plate (isn’t it super easy)
Tips:
1. Coriander only uses stems, which is more refreshing when paired with scallops
2. The bean paste is made by itself, and it has been fermented for at least half a year, so it increases the flavor and taste of the finished dish
