Congee with Preserved Egg and Lean Meat

Wash the rice thoroughly, soak it with a little water, cooking oil, and salt for half an hour.

Prepare a piece of lean pork meat.

Cut the preserved egg into small dices.

Boil the lean meat in boiling water until it changes color and remove it.

Put enough water in a clay pot, add rice, half of the preserved egg, lean meat, and minced ginger after the water is boiled, and mix well.

After the water is boiled again, turn to low heat and cook for about an hour until it becomes thick.

Remove the meat and tear it into filaments by hand.
8.
Pour the other half of the preserved egg and shredded pork into the pot.
9.
Continue to simmer for about 10 minutes, and finally add salt to taste.
Tips:
1. Add enough water to make porridge at a time. Don't be afraid of a long time. Only by slow time can you make a good soft porridge.
2. It is not recommended to use other seasonings, ginger and salt are enough, otherwise it will cover up the aroma of the porridge.
