Cowpeas in Cold Dressing

Wash the cowpea to remove the tendons

Place the washed cowpea in a pot, add some salt and cook, usually after the water is boiled, cook for 4 to 5 minutes

Mince the ginger and garlic while cooking the cowpea

Pick up the boiled cowpeas and let cool and drain the water

Cut the drained cowpea into sections for later use. Place the ginger and minced garlic on the cowpea

Put an appropriate amount of oil in the pot, add the peppercorns to burn out the pepper flavor, then remove the peppercorns and pour them on the cowpea in step 5

After pouring the pepper oil, add light soy sauce, vinegar, sesame oil, sugar, chicken essence, and chili oil in sequence. Mix well and serve
Tips:
In this recipe, the step of adding hot oil to pepper can be changed to directly stir an appropriate amount of olive oil in the cowpea.
