Cowpeas in Cold Dressing

Put half a pot of water, add 1/2 tsp of refined salt to make the cowpea taste a little bit. The cowpea is harder and cook for a little longer. To keep it from turning yellow, add 1/4 tsp of baking soda. , Cook until dead, pick up and let cool;

Prepare minced ginger and minced garlic, slice 1/2 of the chili pepper, cut chili rings, save slices for decoration, mince the rest, and place in a bowl of minced garlic and ginger;

Add 2 tbsp light soy sauce, 1 tbsp vinegar, 1/2 tbsp sesame oil, 1/3 tsp sugar, and 1 tsp fish sauce in a bowl, and mix thoroughly;

Tips:
1. Add suitable baking soda or liquid water when blanching cowpeas to keep the material green after cooking;
2. The seasoning for the cold salad can be combined according to your own taste. It is good to have sesame paste, but you can add sesame oil if you don't have sesame paste.
