Crayfish with Ice Drunk Soda

Crayfish cut off the legs and whiskers of the crayfish, and brush them clean with a toothbrush under running water

Put the water in the pot and steam for ten minutes, rinse and soak in cold water (I didn’t prepare ice cubes)

Put tangerine peel, plum, rock sugar, bay leaf, cinnamon in a small pot, pour some Huadiao wine, cook on low heat until the rock sugar melts and bring to a boil, let cool and add Bingfeng soda

Pack the crayfish in a yogurt sealed box, and pour the water mixed with Bingfeng soda to submerge the crayfish🦞

This is the sealed yogurt box, put it in the refrigerator overnight

Tips:
1. The crayfish did not remove the shrimp thread. I tried a few. The meat of the shrimp thread is obviously loose after being cooked. If the shrimp thread is to be removed, it is better to tear off the meat on the back of the shrimp when it is cooked and eaten. Remove the shrimp thread, and the shrimp heads are not cut.
2. When washing the shrimp, you can actually cut off the shrimp tongs and the shrimp legs together. Anyway, do not eat it after it is cooked, and it is easy to be caught when washing the shrimp.
3. Huadiao wine can be increased or decreased according to personal circumstances, and you can use less when driving frequently.
4. The soda I used Bingfeng in Xi’an, which feels cheaper and better than the Arctic Ocean in Beijing. You can also use Sprite, Coke, etc.
