Crispy Beef
1.
Ingredients: beef slices, minced green onion and ginger, soaked in water, mixed with sweet and sour sauce, cornstarch and water to make a paste, then pour in a little oil.
2.
Put salt in the beef slices.
3.
Pour rice wine.
4.
Add green onion and ginger water (pour in several times), and stir well.
5.
The prepared rice flour paste should not be too thin, and the meat should be slightly thicker to coat evenly, (as shown in the picture).

7.
The beef slices are fried until the surface is set.
8.
Remove the oil control.
9.
Heat the oil in the wok to 80% hot again, pour the fried beef slices into the oil and re-fry.
10.
Re-fry until the surface is stiff and browned, and remove.
11.
Pour the sweet and sour sauce into a pot and bring to a boil.
12.
Add soy sauce, thicken the thick gorgon until the soup is slightly thick.
13.
Fry the fried beef slices in the pan until the sauce is on the surface.
14.
Take out the pan and serve.
