Crispy Cod

Cut the cod fish into small pieces, add some cooking wine, salt and black pepper, mix well, and marinate for 30 minutes.

The marinated cod pieces are evenly coated with cornstarch

Dip with whole egg liquid

Finally, evenly coat a layer of bread crumbs

Dip all the cod pieces one by one and set aside

Put a little more oil in the pan and heat it to 80% hot

Add the breadcrumbs of cod fish fillet and fry on medium-low heat until golden on one side.

Turn it over and fry the other side until golden

Control oil for use after fishing out

When the oil in the pot is heated to 90% hot, pour in the cod fish just removed for the second frying. The fire exploded for about two minutes and kept turning during the period.

Remove the oil control and load it on the plate.
Tips:
1. The cod is originally delicious, so there is no need to add too much seasoning to marinate.
2. The breadcrumbs I use are homemade and the color is relatively golden.
3. For the first frying, use medium and small fire to deep-fry the cod fillets.
4. The second time to fry with high fire is to force out the excess fat absorbed by the cod pieces. The fried cod pieces are now crispy.
