Crispy Fried Chicken

Prepare the ingredients, wash the chicken thighs first, remove the chicken thigh bones, remove them all and put them on a plate.

Add 1 teaspoon of salt, appropriate amount of cooking wine, black pepper, white pepper, green onion, ginger, garlic flakes and 1 teaspoon cornstarch to the chicken thigh.

Knead evenly with your hands, so that the chicken thighs are covered with marinade, and marinate for more than 1 hour.

In another bowl, put 100 grams of flour, 25 grams of cornstarch, 1 egg, 1 teaspoon of salt, black pepper and white pepper.

After mixing well, add 160 grams of water and stir into a dry powder-free batter, and let it stand for a while.

Put the marinated chicken thighs in the batter, so that each chicken thigh is covered with batter.

Pour an appropriate amount of oil into the pot, add the battered chicken thigh when it is 70% hot, and fry it until both sides are golden brown.

Drain the oil, serve it on a plate, and drizzle with your favorite sauce.
Tips:
1. It is recommended that the chicken thighs be marinated for more than 1 hour in advance to add more flavor.
2. I bought chilled chicken drumsticks. You can make them directly after you buy them. If they are frozen, they must be defrosted in advance.
