Crispy Roast Pork

The pork belly is thicker, but not too fat.

Put it in a pot of cold water after washing.

I use an induction cooker and use the hot pot program to cook on medium heat until 7 is mature.

After cooking, put it in cold water and let it cool.

After cooling and taking it out, use kitchen paper to soak up the excess water.

After sucking dry, insert the skin with a fork, and insert as many small holes as possible; the whole skin must be inserted into the hole.

Turn over to the meat side and cut the meat apart, and it will stop when it is about to get close to the fat.

After cutting, coat the meat and meat gaps, left and right sides with five-spice powder. Do not coat the skin with five-spice powder, otherwise the color will not look good when roasted.

After the five-spice powder is wiped, add an appropriate amount of salt to the cracks, surface and sides of the meat.

Turn to the skin side and remove a little baking soda; it must not be excessive or it will affect the taste. Sprinkle on the skin of the meat.

Spread evenly on the surface of the skin by hand, and baking soda can make the skin more crispy.

After wiping, insert a bamboo stick on the side of the meat. It must be inserted in the middle of the meat; otherwise the meat will roll up when roasting.

Use a piece of tin foil to put the meat side down.

Enclose the surrounding tin foil and put it in the refrigerator for 1-2 hours. If you want to refrigerate it for one night, I marinate it from the morning until dinner and then bake it.

Take out room temperature 30 minutes before baking. The oven is preheated to 230 degrees for the middle-level roasting, and you only need to bake with the 【heating】; the time is 30-40 minutes, and the temperature and time must be adjusted according to each oven.

Take out the roasted meat after the first 30-40 minutes of roasting. At this time, there will be some burnt black on the surface and scrape off with a dining knife. The oven continues to heat for 10 minutes, which is 230 degrees just now.

After scraping, apply a thin layer of oil on the skin of the meat, then continue to bake it in the oven for 10 minutes, and grill it at 230 degrees.

After roasting, let it cool before cutting into pieces.
