Crispy Roasted Crucian Carp
1.
Prepare the ingredients.
2.
The crucian carp is cut to remove the internal organs, gills, black film and scales, draw a knife on both sides of the fish, and evenly spread the salt.
3.
Mince pepper, mince ginger, and mince coriander.
4.
Heat the pan and put the oil on it for 70% heat, then fry the crucian. Don't use a spatula to remove the shovel. You can shake the bottom of the pan to let the oil evenly pour on the fish. Wait until the crucian is crispy on one side and fry the other side.
5.
Take a piece of tin foil and wrap the fried fish in tin foil.
6.
The tin foil must be squeezed tightly at both ends, leaving a little seam in the middle.
7.
Preheat the oven at 200 degrees, put the fish in the oven and bake at 180 degrees for 6 minutes, and then open the tin foil.
8.
Put oil in the pot, put rock sugar on a small fire and turn it into amber sugar water.
9.
Add chili, ground ginger, ground coriander, vinegar, salt, and some water to boil and pour it on the carp.
10.
Then wrap the fish in tin foil, put it in the oven and continue to bake at 200 degrees for 5 minutes.
