Crystal Hoof Jelly
1.
Boil the pig's feet in water, boil it for a while, remove the dirt and oil, put a piece of ginger and some peppercorns in the water in advance, take it out and wash it.
2.
Add ginger slices and green onion to the trotters, simmer for three hours, and add salt. Just put salt in the seasoning, nothing else.
3.
Take out the trotters, remove the bones and cut into strips. Throw away the green onion and ginger.
4.
Pour the soup and pork feet into a smooth container. Put it in the refrigerator or condense at room temperature.
5.
If you buckle it out, you can apply oil on the side of the container first. I never do it because it's easy to get it out.
6.
Mix the ingredients and seasonings with the juice. Just pour on the frozen skin and cut into pieces.
Tips:
Afterword:
My father said that when the raw materials are very fresh, it is best to only put salt in the skin jelly, and do not put other ingredients. There is an authentic meaty aroma.
Be sure not to add too much water, as it may be easier to break if it is frozen. I will add more this time, and I am thinking about making soup dumplings tomorrow. (Standard: Just submerge half of the finger joints with ingredients)
It is very good to make in purple clay pot, it will not boil. It is not easy to become muddy.
My hometown also likes to make a crystal jelly, which contains a lot of colorful vegetables assorted. It's also delicious, in fact, when you pour it into the container at the end, add some into it.
The stewing time is better at three to four hours.
