Curry Rice
1.
Prepare all the ingredients.
2.
Let’s cook the rice first.
3.
Time to cook the rice, to prepare the curry side dishes. Wash the potatoes, carrots, and onions separately, peel them, and cut them into evenly-sized pieces with a knife.
4.
Clean the chicken breasts, cut them into chunks, add appropriate amount of soy sauce, cooking wine and starch, mix well and marinate for a while. Chicken breast will shrink when heated, so don't cut it too small.
5.
Heat the oil in a pot. After the oil is hot, pour the chicken breasts into the pot.
6.
Fry the chicken breasts until the surface turns white, and transfer them to a bowl for later use.
7.
Leave the remaining oil in the pot, pour the onion into the pot and stir-fry on high heat until the onion becomes transparent.
8.
Pour all the potatoes, carrots and green beans into the pot and stir fry for one minute.
9.
Pour in the right amount of water, the amount of water should cover all the ingredients, cover the pot, and start cooking on medium-high heat.
10.
After the potatoes and carrots are boiled until soft, add the chicken breasts and stir-fry them evenly.
11.
Add the curry cubes and continue to simmer until the curry is completely melted.
12.
Pour in an appropriate amount of coconut milk and continue to cook until the soup is slightly thick, then turn off the heat. Stir it from time to time during this period to avoid sticking the pot. Don't put the soup too dry, the bibimbap is super delicious.
13.
After the rice is cooked, put it in a bowl.
14.
Prepare a flat plate and pour the rice onto the plate. Don't take the bowl off, just put the curry side dishes on the plate.
15.
Remove the bowl, drizzle some soup on the edge of the rice, and garnish the top with fried black sesame seeds, and you can eat it.
16.
The rice prepared for the children needs to be made cute, so the rice ball mold is used, and the rice is put into the mold to fill it up.
17.
Then put the mold in the center of the plate, and put some curry around it.
18.
Remove the mold, use seaweed to make facial expressions for a while, and decorate it.
Tips:
1. I use the original curry cubes, which can be eaten by adults and children. If you like spicy flavor, you can change it to other flavors.
2. Chicken breasts can also be replaced with chicken thighs or drumsticks. The chicken breasts are marinated for the taste and then fried. Wait until the other side dishes are soft and then put it in the pot. It will taste more tender.
3. Coconut milk is indispensable, not only can enhance the flavor and fragrance, but also can make the curry taste richer. If you can't really buy coconut milk, you can use pure milk instead, of course, the taste will be less.
