Prepare ingredients, slice potatoes, slice eggplant into hob pieces, and slice green peppers. Soak the cut potato slices in clean water and wash, and pat a little starch on the eggplant to prevent inhalation of a lot of oil during the frying process.

Dry the potato slices with kitchen paper, pour the amount of oil that can cover the ingredients in the wok, put the potato slices in cool oil, wait until the edges of the potato slices are fried and turn yellow, remove the potato slices and set aside.

Continue to put the eggplant pieces and green pepper slices in the frying pan.

Leave a little oil in the wok, add the minced garlic, fry the aroma, add the eggplant, and stir-fry the potatoes in turn. To prevent sticking to the pan during the frying process, add boiling water along the side of the pan.

Add light soy sauce, appropriate amount of salt, and stir-fry evenly.
