Tips:
1. Don't open the oven door halfway when baking the puffs, otherwise the puffs will not be sent. In addition, after baking, you can simmer for a while, so that the puffs will be more crispy.
2. Pay attention to the control of the heat when boiling the caramel. The caramel will be boiled with big bubbles first, then dense small bubbles, and finally the color will change. If the color changes slightly, turn off the heat, and the color will be just right.
3. The caramel will harden when it cools, and you can reheat it again when you use it.
4. Puffs like fillings, so eat them when they are done. If you don't eat them right away, it is recommended not to put fillings, otherwise the puffs will become soft and affect the taste.
