Dried Bamboo Shoots in Pot

Prepare the early ingredients

Remove the hair from the pig's hands, chop them into pieces, blanch them with hot water, remove the blood foam, and wash them with water; wash the star anise, cinnamon and bay leaves with water to remove dust; chop ginger and garlic cloves. Soak the dried bamboo shoots in warm water overnight, rinse them off, and cut them into diagonal pieces.

The pork knuckles are marinated for 20 minutes with light soy sauce, dark soy sauce, cooking wine, salt, vegetable oil, star anise, bay leaves, cinnamon and minced ginger and garlic. Then add bamboo shoots, rock sugar and water, cover with holes, put in a microwave oven, use the Dawu fire to heat for 20 minutes, then turn to a slow fire and continue heating for 60 minutes.
