Cut the prawns off the prawn thread, open the back and remove the gills

Put oil in the pot and put shrimp

Fry on both sides until golden brown and serve on the plate

Put another oil in the pot, add chopped green onion and minced garlic, add a spoonful of Lao Gan Ma

Add cooking wine and water, add prawns and simmer for a minute, add a spoonful of sugar and vinegar

Just sprinkle some chopped green onion just before it is out of the pot
