Dry Braised Short Ribs

1. Wash the small ribs and boil it in hot water, then take it out, put a little oily garlic, ginger slices, peppercorns into the pot, stir fry until fragrant, add the boiled small ribs, stir-fry over high heat

2. Stir fry until the flesh is slightly browned, add light soy sauce and continue to stir fry

3. Stir fry until the short ribs are a little tight, and more oil (the oil of the ribs) appears in the pan, and the ribs are browned obviously

4. Add salt, add a small bowl of boiling water (do not exceed the ribs), turn to low heat and cover for 5-10 minutes after boiling.

5. Open the lid and collect the juice on high heat. After the juice is collected, stir fry a few times to turn the soup into oil

Precautions:
1. It tastes better in an iron pan than in a non-stick pan.
2. Use small ribs, the taste of ordinary ribs is not good
