Dry Stir-fried Double Strips

500g potatoes, 500g zucchini, green onions, ginger, dried peppers.

Cut the potatoes into thick strips. Soak in light salt water for 20 minutes.

Stuff the zucchini and cut into thick strips. Add appropriate amount of flour, mix well and set aside.

Shred the green onion, ginger, and dried chili.

Heat the oil in the pan, drain the soaked potato chips, and fry them in the pan.

Fry until golden brown, remove and set aside.

Add zucchini strips dipped in flour and fry.

After frying the golden brown, remove it for later use. Since zucchini has more moisture, it can also be fried twice. Use warm oil for dehydration first, and then use warm oil to add color.

Leave the bottom oil in the pot and sauté the peppercorns over low heat.

First add the green onion and ginger until fragrant, then add the shredded chili and fry until fragrant.

Add the fried potato strips and zucchini strips and stir-fry quickly and evenly.
