Edamame Mixed with Chicken Gizzards

Cook the edamame and stir in a pinch of salt.

Wash chicken gizzards.

Put salt, dried chili, dried pepper, cinnamon, star anise, ginger slices, and cooking wine in a pot of boiling water.

The water opens up into the chicken gizzards.
5.
Cook chicken gizzards over low heat, remove and cut into slices.
6.
Put edamame, chicken gizzards, shallots in a bowl, add chili oil, sesame oil, chicken essence, garlic froth, and soy sauce, and mix well.
