Edamame is one of my favorite ingredients. When fresh, it tastes delicious and sweet. When dried, the soybeans can be used to squeeze soy milk, make tofu, and steam salted duck. Edamame is also rich in amino acids that protect the liver and kidneys after drinking—methionine, Vitamin B1 and vitamin C can promote the decomposition of alcohol. It is especially suitable for a plate of salt water edamame in summer when skewered and drinking.
Peeled edamame is usually sold in the market. Although it is more convenient, I generally like to buy edamame in the shell. The flavor is the most delicious when I go home and make it. When buying, pay attention to whether the edamame is fresh, and whether the epidermis of the edamame pod is shiny or not. Stale edamame is often soaked in water. The fresh pods are hard to eat. Each pod contains 2-3 beans. The color of the beans should be green or green-white. The beans are tightly wrapped with a translucent seed coat (white film around the beans)物), there is juice flowing out of the pinch by hand.

Edamame Roasted Chicken

1. Chicken thigh diced

2. Chicken wings cut in half

3. Peel the shelled edamame

4. Red pepper cut into sections

5. Sliced ginger

6. Dried chili, cut into sections

7. Stir-fry the red oil in a hot pot with cold oil in the bean paste

8. Add ginger and dried chili and stir fry until fragrant

9. Add the chicken pieces and stir fry evenly

10. Add cooking wine, light soy sauce and dark soy sauce and stir fry for color and flavor

11. Add edamame and stir fry evenly

12. Add 3/2 of the water covering the ingredients, cover and cook on medium heat for 15 minutes

13. Add red pepper and stir fry

14. Finally, add some salt and stir fry to taste
