Egg Loofah
1.
Peel the loofah.
2.
Split in half.
3.
Cut diagonal slices for later use.
4.
Chop green onions and set aside.
5.
Beat the eggs.
6.
Heat the pan with cold oil and scramble the eggs first.
7.
The scrambled eggs are served and set aside.
8.
Leave the bottom oil in the pot and saute the chopped green onions.
9.
Add the loofah and stir fry.
10.
After the loofah comes out of water, add the scrambled eggs and use the eggs to drain the loofah juice.
11.
Season with salt and serve.
