Egg Yolk Mashed Potato Salad

Potatoes are boiled or steamed, or peeled and sliced and put in a pot with eggs to cook;

While it is hot, mix the cooked potatoes and egg yolks into a puree, then add a little bit of fine salt and mix well;

Finally, add the sweet salad dressing and stir well.
Tips:
* I have tried the whole potato. After washing it, add some water and put it in the microwave, press the "Steam Sweet Potato" button to microwave it, then peel off the potato and press it into a puree;
* I also tried peeling, cutting into slices, adding water to the pot and cooking until the chopsticks can penetrate, then remove it and press it into puree;
Both are OK! Just cook it your own way...
* For poached eggs, I always cook them for 4 minutes, then turn off the heat and simmer them for 5 minutes. The egg yolk does not have dark circles, and the taste is very tender;
The egg whites can be eaten together. According to personal preference, adding some fruits such as small tomatoes or raisins is also a good choice~
