Eggplant is rich in vitamins and minerals, especially purple-skinned eggplant is of great benefit to patients with hypertension, hemoptysis, and purpura. I like to eat eggplant boxes, but sometimes I don’t want to eat meat, so I invented this eggplant cake. It can be used as a dish, as a staple food, as a snack. It is very fragrant. If you like eggplant, you must try it.

Eggplant Cake with Sauce

1. Eggplant cleaned

2. Cut horizontally, cut the eggplant into round slices about 3mm thick

3. Beaten eggs

4. Add flour and sesame seeds and half a teaspoon of salt

5. Stir evenly, without flour particles, into a paste

6. Put the eggplant slices into the egg batter to coat the batter

7. Heat oil in the wok, with more oil, add eggplant slices when the oil is 50 minutes hot, and fry on low heat, turning it in time

8. See that the eggplant slices are golden on both sides and you can remove it

9. Chopped green onion and cilantro

10. Pour out the bottom oil from the frying spoon and add a bowl of water directly. Add oyster sauce, soy sauce, green onion and coriander, water starch to thicken the juice

11. Pour the prepared sauce on the fried eggplant

Tips:

If you want to make staple foods or snacks, you can eat them directly without adding any sauce for a long time. The egg roux should be thicker. You can add a little more flour and mix thoroughly with water.
