Eggplant Salad

The eggplant is soaked in light salt water for 10 minutes and then washed. You can also rub it with flour to reduce the pesticide residue.

Put the eggplant into an electric steamer. The eggplant is relatively large. I steam it with a two-tiered steamer. The electric steamer's water tank is filled with water and the steaming lid is covered. Note that this electric steamer does not need to be preheated, and the steam is fast for 10 seconds.
