Eggplant Sandwich

Slice the eggplant, add salt and pepper, mix well, then add garlic, mix well and marinate for a while;

Sliced tomato; chopped coriander;

Pour olive oil into a frying pan and heat over medium heat, add eggplant slices and fry until golden on both sides;
