In order to make this eggplant with minced meat sauce, I checked out N methods, and finally improved the healthy version of eggplant with invincible sauce. The authentic sauce eggplant must be oiled twice and fried until golden, but eggplant is the most oily vegetable. I changed the eggplant strips to first coat thin starch, and then stir-fry it with wide oil until it is yellow and soft. In addition, eggplant and seafood are a natural match. Our local dish is fried eggplant shreds with shrimp paste. Therefore, I improved the sauced eggplant and added my homemade XO sauce with seafood. The sauced eggplant tastes more delicious and rich, and the sauce is overflowing. It is really an invincible rice killer. This dish has won the praise of my parents.

1. Wash the eggplant and cut into slightly wider strips, add salt, mix well and marinate for 10 minutes

2. The salted eggplant strips remove the water and stir in the starch, so that each eggplant strip is covered with thin starch. Heat wide oil in a pan and stir-fry the eggplant strips until they are soft and yellow.

3. Heat oil in a wok and sauté the minced garlic, pour in the minced pork and stir-fry until the color changes

4. Pour in homemade XO sauce, then pour in bean paste and continue to stir fry

5. Pour in the stir-fried eggplant strips, stir-fry gently, and sprinkle with chopped chives and small red peppers.

Tips:

1. Cut the eggplant strips a bit wider, so they are easy to mess up after being stir-fried;
2. When widening the pan in the oil, the oil temperature is not too high;
3. When frying minced meat, after adding the sauce, it feels slightly dry, you can add a small amount of boiling water;
4. XO sauce adds a lot to this dish, you can make it yourself and buy it in the supermarket;
5. Finally, pour the eggplant strips into the pot and stir-fry together with the minced meat. Don't stir it too much.
