Eggplant with Sauce

Wash the eggplant and cut into slightly wider strips, add salt, mix well and marinate for 10 minutes

The salted eggplant strips remove the water and stir in the starch, so that each eggplant strip is covered with thin starch. Heat wide oil in a pan and stir-fry the eggplant strips until they are soft and yellow.

Heat oil in a wok and sauté the minced garlic, pour in the minced pork and stir-fry until the color changes

Pour in homemade XO sauce, then pour in bean paste and continue to stir fry

Pour in the stir-fried eggplant strips, stir-fry gently, and sprinkle with chopped chives and small red peppers.
Tips:
1. Cut the eggplant strips a bit wider, so they are easy to mess up after being stir-fried;
2. When widening the pan in the oil, the oil temperature is not too high;
3. When frying minced meat, after adding the sauce, it feels slightly dry, you can add a small amount of boiling water;
4. XO sauce adds a lot to this dish, you can make it yourself and buy it in the supermarket;
5. Finally, pour the eggplant strips into the pot and stir-fry together with the minced meat. Don't stir it too much.
