English Nightingale Fried Rice

Preheat the oven to 200°C.

The traditional Nightingale fried rice uses salted cod, but it is difficult to find in China, so smoked salmon is used instead. But the match can actually be very mobile, you can use any meat you like.

Add cold water to the egg in a pot, heat to a boil, remove from the heat, cover and simmer for 15 minutes. Then rinse with cold water. Peel off the shell, separate the egg white and yolk, and cut the egg white into large pieces.

Tips:
1 Smoked salmon can be replaced by other meats.
2 For better results, sieving the egg yolk is very important.
3 You can squeeze a little lemon juice when eating.
